El segundo aire y los bolillos de Tepic
Mis días en este mes parecen más cortos, las emociones como olas furiosas. Además de gestar este proyecto, encabezo sin buscarlo, sólo actuando, un “movimiento pro árbol urbano”; el cual me ha tenido ocupada de más: redacto oficios, organizo, hago mil llamadas, busco quién done dinero para pagar a un especialista en árboles y todo para que no corten unos de los árboles más frondosos de la ciudad. Aunado a esto, firmo mi separación en una dualidad de sentimientos; y por si fuera poco hoy llega Roberto, el fotógrafo, para reembarcarme en el viaje buscando los sabores de Nayarit.

Despierto algo abrumada, sólo respiro profundo, una y otra vez hasta conectarme conmigo, con el Creador; busco el rumbo de esta investigación que en momentos me ha parecido una obstinación. No obstante, cuando he querido aventar todo por la borda siempre hay una señal que la interpreto como divina y me obligo a seguir. Puede ser desde una libélula que aparece de la nada, la palabra de alguien, la frase en algún libro, cuyas vibraciones resuenan llenando todo lo que hay en mí.
Al respirar una y otra vez, pienso en los bolillos de Tepic. Su característica: crujientes por fuera, con una costra media y suaves por dentro, sabor neutro aptos para acompañar unos camarones rancheros o un requesón con miel.
Así que decido iniciar a Roberto en una de las panaderías más típicas de Tepic, al menos para mí: El centro bolillero de Tepic. Su especialidad es el bolillo tradicional, en horno de barro. A su vez, por mi casa pasa un señor vendiendo bolillo con las mismas características, que también me gusta mucho. Espero su recorrido matutino y le pregunto por la panadería donde lo elaboran.

Luego de obtener la información, ya tenemos dos lugares para visitar, de esta forma me adentro en el mundo del bolillo. Siempre me gustó este giro de la cocina desde antes de aprender a hacer panes. Hacer las galletas de avenas me requería el contacto con la masa, usar las manos, sentir la suavidad de la mantequilla con el azúcar, presenciar su firmeza al ir incorporando el resto de los ingredientes, al punto que era muy difícil para la batidora hacer esta labor. El chocolate, la avena y la nuez, la volvían muy pesada; entonces las manos entraban en acción y el Haiku (métrica japonesa) siguiente se volvió mi lema:
“Esta noche como muchas sin amante, haré pan hundiendo mis nudillos en la masa suave”.
Esta relación cocina-sensualidad, dio inicio. La sensualidad entendida como el deleite de los sentidos. Hundir las manos en la masa, balancearme, oler la vainilla, ¡ver el cambio en la masa al hornearse! Para luego comerlas.
Al preguntar en ambos lugares sobre la elaboración del bolillo me doy cuenta que provienen de una misma familia, los Mu Rivera. La tradición la inicia el padre, la siguieron los hijos y ahora están los nietos a cargo. Al entrevistar al Sr. Agustín Mu, le pregunto si conoce la historia de este pan, yo busco la raíz, la desconoce; pero me arroja luz cuando declara que este pan también es conocido como pan francés. Podría asegurar que es un vestigio de los franceses instalados en Tepic a finales del 1800. Este bolillo es tan rico como una verdadera baguette. Los ingredientes son harina, sal, malta, agua y levadura. Las proporciones son secreto de familia.

Este producto está hecho por artesanos que dominan cuatro habilidades. La relación con los cambios físicos producidos al contacto de la levadura, agua y harina; ésta habilidad, aunque auxiliada por la tecnología requiere un conocimiento íntimo de la masa para que no se “talle de más”, luego reposarla, pesarla, cortarla, volverla a reposar, darle forma. Nos encontramos la segunda habilidad, la maestría para realizar lo que llaman “la hechura”, con gran destreza le dan forma a esa materia desordenada. Se debe estirar, enrollar apretadita para que se “haga bien”, luego la ruedan bajo sus manos entrenadas para darle la forma final y reposarla sobre una tela que le van haciendo pliegues y separa cada “bolillo”. Cuando la primera habilidad dictamina que el bolillo ya formado ha alcanzado su madurez al volverse a levar con su forma casi final, se procede a hacerle un corte para luego tomar una pala larga, larga, larga y entregarlo al elemento del fuego en una relación estrecha, donde no hay termómetros, sólo el matrimonio desarrollado con el tiempo en una ecuación refracción de calor y tiempo de fuego. Cuando el bolillo entra al horno no hay flama alguna, sólo el calor guardado por los ladrillos. Entonces el artesano del bolillo, toma dos palas con cautela, como si fuera torero a punto de ensartar las banderillas, y con movimientos imperceptibles coloca en el piso del horno de 6 a 8 bolillos, su agilidad última estriba en el movimiento maestro de las palas, coloca los bolillos crudos en un giro rápido y preciso de muñeca, y a la vez con sólo el color sabe cuáles están ya cocidos para sacarlos cayendo en cascada sobre un canasto. Elabora una sola persona 700 bolillos hechos a mano en un lapso de aproximadamente 5-6 horas, entre reposo inicial de la masa y reposo de la masa ya con forma de bolillo, hechura y horneado.
El bolillo ahora me sabe a respeto por la labor realizada.




Renewal and Tepic´s French roll style bread call Bolillo

During this month my days seem shorter, emotions like angry waves. Besides producing, like a baby in my womb, this Project, I lead without looking for it, just acting, a “urban tree movement”, which has kept me busy. I write official documents, I organize, I make a thousands of calls and I am looking for people who is willing to donate money in order to bring a specialist in trees and all this effort is to prevent Government to cut down a couple of the few big trees left in the city. On top of it, I sign my divorce in a duality of emotions, and if that wasn´t enough, today arrives Roberto, the photographer, to begin travelling with me in search for the taste of Nayarit again.
I wake up overwhelm and I start breathing deeply, over, and over again until I finally connect with myself, with the Creator, and I look for the path to follow in this research that at times seems a stubbornness on my part. But every time I have wanted to throw everything away and do something else, there always shows a sign that I interpret as divine and forces me to keep going. It can be a damselfly that appears out of nowhere, someone´s word, a phrase in a book, whose vibrations reverberate filling everything there is in me.

When breathing over and over, I start thinking on Tepic´s bolillos. Their feature: crunchy on the outside, with a medium crust and soft on the inside, neutral taste that can be eaten with ranch style shrimp or requesón (a sort of cottage cheese) with honey.
So I decide to initiate Roberto in one of the most typical bakeries in Tepic, at least to me: “El centro bolillero de Tepic” (“Tepic´s bolillo center”). Their specialty: traditional bolillo, baked in brick oven. At the same time, a guy walks by my house selling bolillo with the same characteristics and I ask him where it is bake.
After getting the information, we already have two places to visit, this is how I walk into the bolillo world. I always enjoyed this realm of cooking, even before learning to make bread. To bake oatmeal cookies required to have contact with the dough, to use my hands, to feel the soft texture of butter with sugar, to witness it´s hardness when incorporating the rest of ingredients, to the point that the use of a mixer was impossible. Chocolate, oatmeal and nuts made it hard, then my hand would come into action and the next haiku (Japanese poetic metric)  became my motto:
“This night, as many without a lover; I will bake bread sinking my knuckles in the soft dough”
This is how my sensuous-cooking relation begun. Sensuousness, meaning giving pleasure to my senses. To sink my hands in the dough, to balance, to smell vanilla, to witness the change in the dough when baking! To finally eat it.

After asking in both places about bolillo, I realized that they belong to the same family, Mu Rivera. The tradition begun with their grandfather, then the sons and now the grandsons. In my interview I asked Mr. Agustín Mu if he knew the story of this bread. I am looking for the roots; but he ignores them, at the same time throws me some light on the matter: “this is also named French bread”. Then I am sure it is a trace from the French living in Tepic back in the 1800. This bread is as good, as a true French baguette. Ingredients are flour, salt, water, yeast and malt. Proportions are a family secret.

This product is made by artisans that master four skills. The relationship with physical changes produced by the contact of yeast, water and flour; despite helped by technology it requires an intimate knowledge so “it would not be overmixed”, to let it rest, weight it, cut it, let it rest again, to shape it. Coming across the second skill: to shape this matter without form. It needs to be stretch, roll it tightly and when it has the shape of a small cylinder, roll it back and forward to get it right and give it  rests; on a board that has a long cloth, creasing it to separate each dough in the shape of a bolilllo, until it grows to its maturity in the final shape. Then cut it slightly, then take a long, long, long baker shovel to deliver it to the element of fire in a deep knowledge, where thermometers do not exist, only the marriage developed with time in an equation heat refraction  and flame timing. When bolillo gets in the oven there isn´t any flame, just the heat kept by bricks, then the bolillo artisan takes carefully two of these shovels as if he were a matador about to thrust the banderillas, and with a fast movement places in the oven 6 or 8 bolillos at a time. His last skill is the master movement of shovels placing bolillo shape dough in a quick and precise twist of wrist and, with the color change he knows which ones are ready to take them out on a cascade catch by a basket. One artisan bakes over 700 bolillos shaped by hand in about 5-6 hours, in between rest time, shaping and baking.
Bolillo, to me, has the taste of respect for the labor of these men.
