Los sabores que movilizan emociones…
Ya he estado en la región de San Blas, Matanchén y La Cruz varios días. Pasar por la carretera y ver las palapas con hornos humeantes de mangle, listos para zarandear o tatemar; o los ostioneros que van en motocicleta vendiendo sus ostiones a ¡50 pesos la docena!, te los abren con unos golpes y es probable que veas al pobre animal acuoso moviéndose; el pan de plátano, del famoso Juan Bananas; todo, absolutamente todo, moviliza emociones de distintos tiempos en mi vida. Estoy segura que si alguien no conoce esta región, y lo hace, dejándose llevar por el vaivén de este maravilloso mar, sufrirá de este encantamiento.

Algo que debo probar cada vez que vengo son los camarones rancheros de Doña Chelina (está en frente de la tobara)…a ella la recuerdo detrás de un tambo torteando, también detrás de su cocina haciendo chisporrotear las cazuelas en tiempos certeros, para luego nosotros rítmicamente respirar profundo entre bocado y bocado por lo enchiloso de la salsa. Pero estos camarones son así. Su arroz rojo es riquísimo, no busca que los granos estén despegados como lo hacemos en la ciudad, al contrario. Chelina, al enterarse del propósito de mi recorrido, se mostró generosa y pude participar de sus secretos culinarios. Mi tiempo con ella me permitió descubrir un sabor que acompaña al del paladar, pero es de otra clase: La plenitud de asumirse como son, orgullosos, contentos, alegres. Mientras molíamos los chiles a mis oídos llegó una voz profunda, era la del “Pollo”, un hombre sumamente vivaz, quien tras desayunarse un pescado frito con frijoles, tortillas y salsa, me dijo: “que les vaya bien, ¡ahora ya saben por qué la gente de San Blas somos tan alegres!”- ¿Por qué?- inquirí- “¡No vio lo que me comí!” El buen comer. Esta región es basta en buen comer. La abundancia no para y no tiene que ver con las clases sociales, todos tienen acceso a un ostión, pescado, camarón; luego la combinación del jitomate, chile, cebolla, maíz, en sus diferentes formas de preparar hacen a los diferentes platillos, como los sopes de ostión.

El pollo me recomendó que fuera a la ramada “Lucía y Federico”, que es de su hermana y cuñado. Al parecer Lucía es gran expositora de la gastronomía San Blaseña. ¡Llegué el día que cumplían 40 años de casados! Celebraban ellos solos con sus respectivas copas de vino; así sin más, nos invitaron a participar del aniversario. Lucía, además de excelente cocinera, tiene el alma más jovial que conozco. Sus platos tienen un toque de amor, sal, pimienta justa, la sencillez del limón y la sal, si de zarandear se trata. Para nuestra sorpresa, El Pollo (su hermano, que conocí con Chelina), canta y toca la guitarra con un grupo. Federico (esposo de Lucía), ¡contrató al grupo para que tocaran de sorpresa para Lucía! En una austeridad plena, acompañados por unos extraños, nos abrieron todo lo que son, disfruté bailar con los pies desnudos, con Lucía, con Federico y hasta con Roberto. Luego decidí que invitaría unas botanas para compartir con los músicos, claro, hechas por Lucía; es aquí donde tuve oportunidad de cocinar con ella, su especialidad y dice ella, su creación: la piña rellena de mariscos.  Nuestra tarde se llenó de fiesta, fuego, comida, cerveza; donde la sinceridad fue la anfitriona. Pienso que el sabor de Nayarit va más allá de una conjunción de elementos que crean una receta, su sabor radica en la genta que habitamos el lugar. Cuando le pregunté a Lucía que quién la había ensañado a cocinar, “mi madre”-respondió rotundamente, con expresión de orgullo.

Así, el entramado de personas que voy conociendo se teje. Luego de una tarde de música y baile, voy con Doña Carmen. Es de rostro curtido por la vida, de más de 80 años, pero con el alma intacta, incansable, alegre. Luego de platicar un rato con ella, me llama la atención un ¡caldo de almejas con plátano macho verde!, estoy segura que es de origen cubano…¿cómo llegó?, todavía no lo sé, pero por lo que luego investigué es algo típico de las casa, que no se sirve en restaurantes. Previa cita, al día siguiente cocino con Doña Carmen: jugo de almeja con plátano macho verde, atole tonto de coco, una salsa sencilla y muy rica.
El sabor de los san blaseños me gusta.





Flavors that mobilize emotions…
I have already been in the San Blas, Matanchén and La Cruz region for several days by now. To drive along the highway and see the palapas with their smoking grills with mangrove wood, ready to tatemar or zarandear (see blog from Wednesday); or the guys that sell fresh oyster driving their motorcycles, 50 pesos a dozen!, they opened them by hitting the shell and it is very likely that you might see the poor watery animal moving; the banana bread by the famous Juan bananas; everything, absolutely everything, mobilizes emotions from different times in my life. I am sure that if someone hasn´t come here, and does, allowing himself to be taken by the rhythm of this wonderful ocean, will suffer of this enchantment.



Every time I come here I must eat Doña Chelina´s ranch style shrimp (she is in front of La Tobara)…I remember her behind a barrel making tortillas, also behind her kitchen making pans sputter in due time, to then; having us breathing deeply in between bites because the sauce is too hot. But this shrimp go this way. . Her red rice is extremely good, she does not look that the rice is dry and the grains separated, the way we prepare it in the city, but the contrary. Chelina, when knew the purpose of my journey, showed herself very generous and I could participate of her culinary secrets. The time I spent with her allowed me to discover a taste that joins the palate, but belongs to another category: The satisfaction of assuming the way they are, proud, content, happy. As we were grounding chilies a deep voice reached my ears, it belonged to “El Pollo”, an extremely lively man, whom after having for breakfast a fried fish with, refried beans, tortillas and hot sauce said: “Good bye, now you know why people in San Blas is so happy!”- why?- I asked- “didn´t you see all I ate? Eating well. This region is plentiful with good food. Abundance never stops, and has nothing to do with economical classes, everybody has access to an oyster, good fish, shrimp; then the combination with tomato, chilies, onion and corn, in different ways constitute the different dishes, like the oyster sopes (a small fried tortilla, previously dipped in a sauce, with oyster or shrimp).



El pollo, recommended me that I should go to his sister and brother in law restaurant; “Lucía y Federico”. It seems that Lucía is a great exhibitor of the San Blas gastronomy. I finally visit them on their 40 years anniversary! They were celebrating alone with their glasses of wine; and just like that, we were invited to spend their anniversary with them. Lucía, besides being a great cook, has the most cheerful soul I know. Her dishes have a touch of love, salt, the exact pepper, the simple taste of salt and lemon, when making zarandeado. To our surprise, El Pollo (Lucía´s brother, the guy I met with Chelina) sings and plays the guitar in a group. Federico, Lucía´s husband hired them as surprise to Lucía! In a satisfy frugality, joined by strangers, they opened their hearts to us, I enjoyed dancing barefooted with Lucía, Federico and even Roberto. I then decided to invite some snacks to share with the musicians, of course, made by Lucía, this is how I had a chance to cook with her. Her specialty and she takes pride in saying that it is her creation: pineapple stuffed with seafood. Our afternoon was filled with party, fire, food, beer; where sincerity was the host. I think that the taste of Nayarit goes beyond a combination of elements that create a recipe, it´s taste is found in the people that live here. When I asked Lucía who tough her to cook, “My mother” said without hesitating, with an expression filled with pride.



That is how the tapestry of people that I am meeting is woven. After dancing and hearing music I look for Ms Carmen. Despite, her face showing sings of the difficulties of life, her soul remains intact, happy, she is over 80 years old. After chatting a while with her, it calls my attention a clam soup with bananas! I am sure that it is an inheritance from Cubans…how did it get here? I don´t know yet. But I know that it is typical in houses, but not in restaurants. With an appointment, I cook with Ms. Carmen: clam soup with bananas, coconut dessert and a very simple but tasty sauce.
I like the San Blas taste…

  1. Alondra, me encanto tu descripcion de las personas, Los platillos y el paisaje, por unos instantes me senti alla, con tus palabras me transportaste a San Blas, probe ese pan de platano, vi a esos ostiones dentro de la piedra moverse y comi ese arroz rojo que describes.
