Huajicori, puerta a lo desconocido
El día está muy soleado, hermoso, no hace tanto calor. Me encuentro con otra carretera en muy buen estado y mi coche se ha comportado a la altura. Poco a poco me adentro a un paisaje diferente. Hay muchos arbustos y escasos árboles, son esbeltos con frondosas copas, las casas son de adobe pintadas de blanco con techos de paja, con un toque africano,  se asoman manchones rojos por el camino. Me bajo del coche para ver qué es…¡Es jamaica! Jamás la había viso en su estado natural, son varas a cuyos lados brotan estas flores reiteradamente a lo largo. Me sorprende lo poco que sé, que sabemos, de los ingredientes en su estado natural de nuestras cocinas y el proceso que requieren para que lleguen a la mesa en un paquete sellado perteneciente a una marca.

Al poco tiempo de continuar, se asoma un arco con la leyenda “Bienvenidos a Huajicori”, sigo el camino principal, llego a una pequeña plaza con una iglesia de piedra rosa, creo que es cantera y en el pilar de la izquierda está labrado un campesino de amplio sombrero. Una iglesia hermosa. En el primer puesto de comida pregunto por el señor Miguel Robles, “¿Para qué lo busca?”- “Es que, es mi tío”- respondo. “¿De quién eres hija?” (ésta mujer sí que es curiosa)- de Rebeca- “Ah, yo la conocí, ahí derecho está su tienda.” En la tienda me dicen que está en su casa a la vuelta, paso por una tienda, donde está una joven amamantando a su bebé, “Disculpa, ¿donde está la casa de Miguel Robles?”- “¿Quién lo busca?”- “Su sobrina”- “¿De quién eres hija?”(aquí no se les va vivo nada, pienso) – “De Rebeca Rodriguera, la hija de Carmen Robles”- “¡Ah! Aquí a la vuelta, estaba por cerrar la tienda, yo te acompaño.”- “Gracias…¿y tu lo conoces?”- “Sí, es mi papá”- “Ah, pues hola prima.” Nos dimos un abrazo y platicamos de mi madre un poco. Llego a la conclusión que ¡mi curiosidad no está inclina hacia la vida privada de las personas!

Llegar a la casa del tío Miguel, fue llegar a la casa de mi abuela, sinónimo de calidez. Después de ponernos al tanto de los años ausentados la conversación sin querer inició su viraje hacia el fogón, qué se come en Huajicori. Al parecer la difunta tía Florencia era muy buena en este arte, mencionaron platillos hasta que sonó el mole, ¡mole! exclamé admirada. Sí me causa admiración porque mis paradigmas dictan que los moles son poblanos, oaxaqueños, defeños, pero no nayaritas, en Nayarit hay mole, lo encontré en la puerta de la sierra. El dilema de la delimitación del tema está dejando de serlo. También me contaron de unos tamales colorados, el nixtamal no se hace con cal, sino con ceniza y que los pintan con palo de Brasil, ¡cuántos platillos desconocidos!

Mi prima Carmen sugirió que buscara a la maestra del kínder, pues a ella le gusta mucho la comida. Alondra, mi tocaya y prima, me guio en su búsqueda. La encontramos muy ajetreada porque al día siguiente por la mañana pasaba el gobernador por ahí, me pidió que la visitara por la tarde después del evento.
Al día siguiente voy a la escuela y para mi sorpresa, la maestra Victoria Zúñiga había convocado a las mamás de sus alumnos para que me contaran de “sus saberes”, por un breve lapso se mostraron un tanto tímidas para luego arrebatarse la palabra e interrumpirse la una a la otra…las diferencias culinarias aparecieron en todo su apogeo, los quelites, agritos, gallina pinta, las chuinas, bayusas, caldos de cauque y el tamal en todas sus variantes. Al ir interrogando sobre ellos me llama mucho la atención el común denominador del maíz en todos ellos. Sé que les va a parecer evidente, pero siendo curiosos, normalmente comemos el maíz en forma de tostada, tortilla y pozole, pero aquí es parte fundamental, se utiliza para espesar, como parte de un mole, para dar identidad a un tamal, se utilizan diferentes colores de maíz, como bebida, en fin, el maíz da identidad a la gastronomía de este lugar. No es sólo un acompañamiento.
Me voy con este pensamiento y divago sobre el Popol Vuh. Que narra cómo en la cosmovisión maya los hombres existentes fueron hechos de maíz, me pregunto si en la cosmovisión cora y huichol los hombres también fueron hechos de maíz y la importancia de este elemento en la identidad del estado. Al llegar a casa de mi tío, me encuentro a la tía Teodora trabajando en el metate, ¡está haciendo tortillas de maíz azul! En el centro del país son muy comunes, pero en Tepic no; sin embargo en esta región son parte de la cotidianeidad que lucha contra la “comodidad” del harina de maíz en paquete y las tortillerías.
Está decidido, quiero buscar la comida de todo el estado, sin distinción entre marisco y carne.

Today is a sunny, beautiful, not so hot day. I find myself in another very good two side road and my car has behave really well. Little by little I go into a different landscape. There are a lot of bushes and few slender with leafy top trees, houses are made of sun-dried bricks, painted in white with lime and straw roofs, an African touched. I spot a red patch. I get down the car to see what it is…It is hibiscus (Jamaica) flower! I had never seen it in its natural state, it is a stick in whose sides, red flowers grow along it. It surprises me how little I know, that we know, about the ingredients in their natural state before they get to our kitchens wrapped in a sealed package belonging to a certain mark.

I keep on, a little while later an arch saying “welcome to Huajicori” greets me. I keep on driving the main road and I come across a plaza with its pink stone church, I think it is made out of cantera stone. On the left pillar a big hat peasant was carved. A beautiful church. In the first food stand I ask the lady if she knows Mr. Miguel Robles, “what are you looking him for?”- “It is just, that he is my uncle” I answer. “Who was your mother?” – “Rebeca (men, this woman is surly curious, I think)”- “Ah! I meet her, straight away there is his store”. Once in the store I am told that he is in his house round the corner. I pass a store and I see a young woman breastfeeding her child, “Excuse me, do you know where Mr. Miguel Robles live?”. “Who are you?”- “His nice”- “Who are your parents?”- “I am Rebeca´s Rodriguera daughter and Carmen Robles granddaughter”- “Ah! He lives right down the corner, I am about to close the store, I´ll come with you.” – “thank you, and do you know him?”- “Yes, he is my father”- “Oh! Hi cousin!” We gave a hug and talked a bit about my mother. I finally reached the conclusion that my curiosity is not incline to the private lives of people!
 Going into uncle Miguel´s house, was going into my grandma’s house, synonym of warmth. After talking about the missed years conversation begins to stir towards cooking and what is eaten in Huajicori. It seems that the deceased aunt Florencia was an expert in this art, amongst the dishes mole showed up, mole! I exclaimed. Yes it causes my admiration because moles to me were from Puebla, Oaxaca, Mexico City, but not from here, but Nayarit has mole, and I found it on the entrance to the Mountains. My dilemma on the delimitation of the topic is coming to an end. I was also told of red tamales, corn is not boiled with lime, but with ashes and the color comes from the branch of a tree call brasil, how many unknown dishes!
My cousin Carmen suggested to visit the kinder garden teacher, because she is interested on the topic. Alondra, my cousin, led me to where the Teacher was. We found her very busy because next day the governor passed through town. She told me to visit her after the event.
Next day, to my surprise when I go to the school, teacher Victoria Zúñiga had called the mothers of her little students, so they would share their “knowledge”. At first they were a bit shy, but sooner than later they were interrupting one another…and their culinary identity begin to show up with the next words that even in Spanish were unknown to me (so guys google them!) quelites, agritos, gallina pinta, chuinas, bayusas, cauque soup and tamales in all varieties. When I begin to interrogate about all different preparations, it calls my attention that corn is the common denominator. I know that to Mexicans this can seem obvious, but being curious, we normally eat it in the form of tostadas, tortillas and pozole, but here is fundamental, it is used to thicken, as a part of a mole, to give identity to a tamal, different corn colors are used, as beverage, to conclude corn gives identity to the gastronomy of the place. It is not only use as bread, like tortillas.
I leave this meeting with that thought in mind and think about the Popol Vuh, the sacred Mayan book. It tells how in the Mayan world vision the existing man were made out of corn, I wonder if in the Cora and Huichol vision men were also made from corn and the importance of this element in the State identity. When I get to my uncle´s house my aunt in working in the metate (a stone mill), she is making tortillas out of blue corn! In the central region of Mexico are very common, but not in Tepic; however in this region is a part of their daily lives that is fighting against the commodity of corn flour and tortillerías (tortilla shops).
It has been decided, I want to research typical food in the whole State, without making distinction between seafood and meat.
